The city of Ajmer, being a central city of Rajasthan it is also known as the Heart of Rajasthan. Because of its geographical location and historical importance, its food culture is highly influenced by both Western and Indian. The Dal Baati Churma is one of the well-known Indian traditional dishes, which is the most popular in Rajasthan. Though you can find it in almost every city of the state, Ajmer’s Dal Baati Churma is profoundly known for its amazing deliciousness.
What is dal bati churma
When it comes to the most famous food of Rajasthan, it immediately evokes a vision of Dal Baati Churma. It is the dish of Rajasthan.
Dal Baati Churma for Rajasthan is like the Pav Bhaji for Maharashtra, Rosogulla for Kolkata, and the Litti Chokha for Bihar.
This dish itself is a complete meal that comprises three separate components, Dal, Baati, and Churma, in one plate. Each of them is made with different ingredients.
Dal is basically a spicy soup of mixed lentils/pulses, which is flavored with various spices like Coriander, Chilli, Cardamom, etc.
Baati is nothing but a round-shaped ball of dough made of wheat flour flavored with salt, yogurt, and water. The dough is cooked over the well-heated oven, though baatis were traditionally cooked over the deep heated charcoals.
It is also quite interesting that baatis were also used by early soldiers as a meal during the war. The combination of hot and spicy soup of lentils and the well-heated dough is known as Dal Baati. And the inclusion of Churma, which is prepared with sugar and gur(Jaggery), makes the entire meal bland, spicy and sweet.
Though it is very popular in north-Indian states, it is considered the signature dish of Rajasthan, even it is the most primary dish of the entire state. You cannot find any nook or the corner where Dal Baati Churma is not available. It is also one of the earliest dishes in the state, and, therefore, its antiquity and deliciousness make it a masterpiece of Rajasthani cuisine. The combination of these(Dal, Baati, and Churma), not only creates an unbelievable taste but also gives the name to this meal, Dal Baati Churma.
Though traditionally it was some royal families who enjoyed this meal, nowadays it is very common, eaten by everyone, available everywhere in Rajasthan. You can find its presence in big fat royal weddings to ordinary. Therefore, it can be defined as a meal of equality.
