What is Malpua
Malpua, a popular Indian sweet dish, is made of all-purpose organic flour or maida, dipped in sugar syrup, and deep-fried in pure/desi ghee. You must have heard about the Pua, which is the most famous and typical Indian festive dish. When a normal Pua is soaked in the sugar syrup, it resulted in the Malpua, garnished with nuts and other indigenous ingredients. It’s almost double that of ordinary Pua, generally served with milk and rabdi (thickened sweet milk), however, you can also have it alone as it’s marvelous in taste.
Why Pushkar’s Malpua is famous
Malpua is one of the most famous sweet dishes of Pushkar. Though it is an ordinary dish, found in most of the Indian food plates, the Pushkar’s Malpua is extraordinary and superior to all other similar dishes in India. Malpua is a perfect blend of white flour known as Maida in Hindi, Rabri/Mawa(Hindi), pure ghee, and sugar, which is generally served alone after deep-frying in desi ghee. The Halwais also add some other ingredients to make it more delicious and unique, like Cardamom, Almond, Rabri, Saffron, and so on. It is generally eaten after the meal, but many people eat it with Kheer and Tea.

Some shops are traditionally the most famous, which you can find just outside the Gau Ghat that is also one of the most bustling places in Pushkar. It is said that Malpuas were originated at this place only from one of the multiple dedicated shops.

- Milk.
- Sugar.
- Refined white flour(maida).
- Desi Ghee/Oil/Dalda.
- Green Cardamom (Elaichy) Powder.
- Almond.
- Rabri.
- Saffron.
The recipe for this super delicious sweet dish called ‘Pushkar Ke Malpua’ is very easy.
You just need the ingredients mentioned above. Take the milk and heat it slightly. Add the white flour in Rabri in another bowl and mix it properly to prepare the batter. Prepare the syrup with sugar and water. Add the Cardamom in boiled sugar syrup. Add the desi ghee to the pan and leave it for heat. Then add the batter in boiling desi ghee with the help of medium size spoon. Then check them after a few minutes, whether these have been boiled properly or not. If these get brown from one side, then turn them to cook from the other side and leave for a few minutes again. Then add the deep-fried Malpuas in sugar syrup. Now, these are ready to eat.
