Recipe

Ingredients For Jalebi Batter

  • All-purpose flour
  • Besan (gram flour)
  • Turmeric powder
  • Baking soda
  • Water
  • All-purpose flour to be added later after the batter has fermented

Ingredients For Sugar Syrup

  • Sugar
  • Water
  • Saffron strands
  • Oil for deep frying (you can also use ghee for frying)

Prepare the Batter

Take a bowl, add the all-purpose flour or maida, besan or gram flour, baking soda, and turmeric powder.
Mix them well, then add the water according to the need.
Again mix them very well until the batter gets flowing consistency.
Now you just need to wait for long, maybe for 12 to 15 hours because you need to keep the batter fermenting in a warm place for 12 to 15 hours.
Then you might need to add the flour to thicken the batter again. Then pour the batter into the squeezy tomato ketchup bottles, piping bag, or anything.

Prepare the Sugar Syrup

Take the sugar in a pan, add the saffron strands. Add the water as required. Keep the pan on a stove on a low flame, then stir. Basically, you need to cook the sugar syrup on low flame.
Once you get the one-string consistency, switch off the flame and add lemon juice as required. Stir very well. Keep the sugar syrup on the burner itself to keep it warmer.

Fry the Jalebi

Take a pan, add the oil or ghee for deep frying. Check the oil whether is hot enough or not if the oil is hot, then squeeze the bottle and make concentric rings with the batter.
Cook the not perfectly round-shaped jalebi, from both sides. Do the same whenever you squeeze the bottle.
Now Add the Fried Jalebi immediately To Sugar Syrup. Keep them in the syrup for about 2 to 3 minutes. Do the same with all jalebis.
Place them on a plate because now the jalebis are ready to serve.
